The Most Healthy Banana Nut Oat Muffins

Who doesn’t love a muffin? They are so versatile with the endless amount of possibilities to make one. This healthy muffin is made with mashed fruit, rolled oats, chopped nuts and maple syrup. Perfect for anytime of the day!

This recipe came from my Aunt Cathy. We live a couple states away from each other so we don’t get to visit often. However, when we do see her and get to enjoy her wonderful cooking—we lovingly refer to her homemade meals as “Cathy’s Kitchen”— its always a treat! She also makes a killer vegan enchilada recipe (I’ll have to share that later). She made us these muffins one time when we were out visiting and they just hit the spot. The bag didn’t last long and I had to get the recipe from her to take home with me. 

While I enjoy a really sweet muffin, like a classic blueberry or lemon poppyseed, I make these ones the most. I appreciate the fact that they don’t have any refined sugar in them and are really hearty and dense. They’re not over-sweet and they keep you satisfied longer. My 4 year old even loves them! Every time she takes a bite of one she happily tells me, “These are my favorites, mom!” And she loves super sweet things, so this is a win for me. 

These muffins are also really easy to make. I haven’t messed them up once (knock on wood), and they always turn out the same way every time I make them. They’re a beautiful brown color and always fully cooked when I pull them out after 20 minutes. This makes me want to bake them more often because they aren’t a hassle and I am never disappointed. I love a recipe like this, it always makes me feel good!

Ingredients:

Fruit:

For banana — either two large or 3 smaller. The riper the better! Mash well first before mixing.

For apple — I use unsweetened applesauce.

Can also use other ripe fruit like mashed peaches, pears, or plums. Whatever is growing on the tree!

How to Make Healthy Banana Nut Oat Muffins:

  1. Preheat your oven to 400 degrees F. Line or grease your muffin tin. Combine dry ingredients into a large bowl. Mix together.

2. In a smaller bowl, combine wet ingredients and mix together.

5. Add wet ingredients into dry ingredients bowl.

6. Mix both wet and dry ingredients together.

6. Fold in 1/2 cup of raisins (optional), just until incorporated.

7. Spoon batter into muffin tin until batter is all gone and evenly distributed. I put approximately 2 spoonfuls into each muffin paper.

8. Bake at 400 degrees F for 20 minutes, or until toothpick comes out clean.

9. Slather with some butter and enjoy!

Ingredients

  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 cup rolled oats
  • 1 Tbs baking powder
  • 1/4 tsp salt
  • 1 Tbs cinnamon
  • 1/3 cup chopped nuts
  • 1/2 cup raisins (optional, but I recommend for sweetness)
  • 1 egg
  • 1 cup mashed fruit (2 large bananas or 3 small)
  • 1/2 cup milk
  • 3 Tbs melted coconut oil
  • 3 Tbs maple syrup

Instructions

  1. Preheat oven to 400 degrees F.
  2. Line muffin tin with papers or grease tins.
  3. In a large bowl mix together dry ingredients.
  4. In a smaller bowl, mix together wet ingredients.
  5. Combine wet ingredients into dry ingredients bowl.
  6. Add 1/2 cup of raisins (about a handful). Mix until just incorporated. (optional)
  7. Spoon batter into muffin tin until batter is all gone and evenly distributed. I put approximately two spoonfulls into each muffin paper.
  8. Bake at 400 degrees F for 20 minutes or until a toothpick comes out clean.
