Super Satisfying Sausage, Egg & Cheese Breakfast Burrito (Freezer Friendly Meal Prep)

The tastiest breakfast burrito filled with savory breakfast sausage, fluffy eggs, shredded cheese and tater tots to make your morning meal fun and simple!

With shredded cheddar cheese, soft flour tortillas, tater tots, and scrambled eggs with cooked sausage, this burrito is a super satisfying (and filling) breakfast that is freezer and large batch friendly! I have learned that keeping the ingredients minimal lends to a tasty burrito with less work. I used to get all crazy with my breakfast burritos by adding fried potatoes, sautéed veggies, diced bacon, etc. It was a lot of work. But I have since narrowed it down to what tastes the best and what is the least labor intensive in the kitchen. After all, I cook these burritos in big batches and I don’t want to spend hours in my kitchen doing it. Big batch cooking for the freezer can get tiring pretty quickly so I aim to keep it simple.

This post is similar to my egg and bacon breakfast sandwich post I recently did. These are two recipes that I consistently make, and also make different versions of in order to not burn out on the same ingredients. This is usually my most requested version of the breakfast burrito I get from my family members so I found it fitting to be my first breakfast burrito recipe on here.

When I batch cook for the freezer, using homemade versus store-bought ingredients depends on how much energy I have or what I feel I can accomplish in the time I have allotted for it. When I really think about it, what truly matters to me is that I am making the meals for my family with intentionality, and I am in charge of what goes into the food I am feeding my loved ones. We all go through different seasons where we can either handle more or handle very little. Such is life! So if pre-made burritos from the grocery store is all you can manage right now, than there is no shame in that and how lucky are we to have those options for when we need them! But if you can currently manage to make your own and are looking for some inspiration for a deliciously classic breakfast burrito, then you’re in the right place!

Some examples of homemade compared to store-bought I typically shuffle through are: 1. I’ve only made homemade tortillas one time for burritos. I haven’t figure out how to get them big enough to wrap what I need inside without making a big mess. I think I might need to invest in a tortilla press, but haven’t gotten that far with it, so I settle for flour tortillas from the store. 2. I used to peel, cut, and fry potatoes for burritos. There’s a lot of added extra steps for that process and I learned from a friend to use store-bought tater tots. They’re already cooked and frozen, and they give a tasty crunch without all of the work! 3. Using pre-shredded cheese from the store versus shredding a block of cheese yourself. Sometimes we just need things to be easy. Like really easy. So do and use what makes the most sense to you at the time you make this recipe!

I am also including cost for you in real time. The ingredients were purchased at Costco, Trader Joes, and Walmart.

As of July 2025-Ingredients for 21 Breakfast Burritos:

Large 10 inch Tortillas $2.73

2 dozen eggs $7.50

2 cups of shredded cheese $1.89

2 pounds pasture raised pork breakfast sausage $28

1 32 oz pack frozen tater tots $4.47

Total: $44.59 divided by 21 burritos = $2.12/burrito

I just want to note that I used locally raised, pastured pork for my sausage. We buy a couple pigs every year from my cousin who raises them. I buy in bulk and it lasts me the whole year. Therefore, this price reflects her specific cut for sale only and not the savings I receive from buying in bulk. I realize this is expensive and you could cut cost on your sausage at the store. From a quick search you can get Jimmy Dean Breakfast Sausage for $4.62/lb. By using that in my burritos it would bring them down to $1.23/burrito. Almost $1 whole dollar! That adds up when you’re prepping in bulk. But I do want to note that even with $28 in sausage these burritos are still only $2.12 per burrito! Still great savings for bulk meal prepping.

I truly believe cooking is an art everyone can learn, and only with time and many failures do you continue to hone your skill and find what works best for you in the kitchen. We don’t have to have this huge arsenal of fancy recipes or special ingredients to make food taste good and impress others. Honestly, the most simple of meals bring the happiest smiles! It’s the basics that you can rely on time and time again, that become staples in your rotation. These staples are easy to manage not only from your pantry’s perspective but also your mental space.

How to Make Breakfast Burritos:

  1. Preheat large skillet over medium heat and add sausage.

2. Cook thoroughly until fully browned. While sausage is cooking, crack eggs into separate bowl and whisk together.

3. Add eggs to skillet.

4. Cook and break into small chunks until eggs are done. Remove from heat.

5. Gather your ingredients in the same area to get ready for assembly. Tear 21 similarly sized pieces of aluminum foil and stack them.

6. Place one tortilla on top of foil. Add approximately 2 full Tbsp of shredded cheese, 4-5 tater tots, and a 1/2 cup of the sausage and egg mixture.

7. Wrap tortilla tightly without tearing it.

8. Wrap aluminum foil around the burrito.

9. Repeat until all tortillas are used. There may be some leftover unused ingredients. Label and freeze for up to 3 months.

To Reheat:

  1. Preheat your oven to 400 degrees F.
  2. Place frozen wrapped burrito inside oven and bake for 20-30 min (give or take) or until burrito is fully heated through and cheese is melted.

FAQs

Can I add sauces to my burritos before freezing?

Yes, technically you can, although I wouldn’t recommend it. I have added ketchup, salsa, guacamole, and hot sauce to my burritos and then freezing it. It just never is the same after you reheat them. In my experience, things like sauces don’t remain the same consistency or even flavor after freezing. We just add salsa or hot sauce to the burritos while we eat them.

What cheese is the best for breakfast burritos?

I mainly use sharp cheddar. It has the most flavor and melts well. I also do like to use monterey jack, and sometimes mozzarella if that’s all I have! It all melts and tastes good inside a breakfast burrito.

Ingredients

  • 21 Large Tortillas (at least 10 inches)
  • 2 cups Shredded Cheese (2 full Tbsp per tortilla)
  • 2 lbs Pork Breakfast Sausage
  • 2 dozen Eggs
  • 32 oz bag Tater Tots (4-5 tots per tortilla)

Instructions

  • Preheat large skillet over medium heat.
  • Add pork sausage and cook thoroughly. While sausage is cooking, crack eggs into separate bowl and whisk together.
  • Once sausage is just fully cooked, add beaten eggs to skillet.
  • Cook and break into small chunks until eggs are fully cooked. Remove from heat.
  • Gather all of your ingredients into one area to prepare for assembly.
  • Tear 21 similarly sized pieces of aluminum foil and stack them.
  • Place one tortilla on top of foil. Add approximately 2 full Tbsp of shredded cheese, 4-5 tater tots, and a 1/2 cup of sausage and egg mixture.
  • Wrap tortilla tightly enough without tearing it, then wrap the foil tightly around the burrito.
  • Repeat until all tortillas are used. There may be some leftover unused ingredients.
