Sausage Egg & Cheese Breakfast Burrito

With shredded cheddar cheese, soft flour tortillas, tater tots, and scrambled eggs with cooked sausage, this burrito is a super satisfying (and filling) breakfast that is freezer and large batch friendly!

Ingredients

  • 21 Large Tortillas (at least 10 inches)
  • 2 cups Shredded Cheese (2 full Tbsp per tortilla)
  • 2 lbs Pork Breakfast Sausage
  • 2 dozen Eggs
  • 32 oz bag Tater Tots (4-5 tots per tortilla)

Instructions

  • Preheat large skillet over medium heat.
  • Add pork sausage and cook thoroughly. While sausage is cooking, crack eggs into separate bowl and whisk together.
  • Once sausage is just fully cooked, add beaten eggs to skillet.
  • Cook and break into small chunks until eggs are fully cooked. Remove from heat.
  • Gather all of your ingredients into one area to prepare for assembly.
  • Tear 21 similarly sized pieces of aluminum foil and stack them.
  • Place one tortilla on top of foil. Add approximately 2 full Tbsp of shredded cheese, 4-5 tater tots, and a 1/2 cup of sausage and egg mixture.
  • Wrap tortilla tightly enough without tearing it, then wrap the foil tightly around the burrito.
  • Repeat until all tortillas are used. There may be some leftover unused ingredients. 
  • Label and freeze for up to 3 months.

To Reheat:

  • Preheat oven to 400F.
  • Place wrapped burrito inside oven and bake for 20-30 min (give or take) or until burrito is fully heated through and cheese is melted.
